It is established in the sunnah and it should be done sometimes.

In Silsilatil Haadeeth as-Saheehah vol. 5 page 156-157 hadeeth no. 2122 Shaykh Naasir ad-Deen al-Albaanee (ra) said:
“The Prophet (sallallaahu ‘alaiyhi was Salaam) use to make wudu waahidah waahidah, (once) and thintain thintain (twice), an Thalaathan thalaathan (three), all of that he acted upon.”
Al-Haythamee volume 1 no. 233 said:
” At-Tabaraanee in al-Kabeer from Mu’aath ibn Jabal, and in it is Muhammad ibn Sa’eed al-Masloob and he is weak.”
I (Shaykh al-Albaanee) say: “Rather he (Muhammad ibn Sa’eed al-Masloob) is a liar, but the hadeeth comes from another path from Abi Raafi’ who said:
“I saw the Prophet (sallallahu ‘alaiyhi was Salaam) make wudu Thalaathan Thalaathan (three), and Maratain Maratain (two), and marah marah (once).”
Related by at-Tabaraanee also in al-Kabeer vol. No. 1 page 317 and 937 and its chain of narrators are authentic and its men are men who are authentic as al-Haythamee said. For it is also supporting evidence from the hadeeth of ibn ‘Umar…
The Shaykh Muhammad Naasirud Deen al-Albaani (ra)(a famous scholar of Hadeeth) said in his explanatory notes on Fiqhus Sunnah:
He(the author Said Sabbiq) said:
“And it isn’t correct to wipe the head more than once.”
I (Shaykh al-Albaanee) say: rather, it is authentic from the hadeeth of ‘Uthmaan that the Prophet (sallaahu ‘alayhi was Salaam) wiped his head three times.
Reported by Abu Dawood with a good chain (hasan) and for it also are 3 good isnaad and I’ve spoken about these chains in some detail in Saheeh Abi Dawood number 95&98.
Al-Haafidh (ibn Hajr al-Asqalaanee d.852) said in al-Fath (explanation of Sahih al-Bukahree):
“Abu Dawood reported from two viewpoints and one of them authenticated by ibn Khuzaymah and other than him in the hadeeth of ‘Uthmaan that he wiped his head three times…”
I (Shaykh al-Albaanee) say: it’s the haqq, because it’s reported once even if it’s done more (than once up to three), there’s no problem because it’s reported that it’s done three times.
It’s sunnah, and from its affair is that it’s acted on sometimes and it’s abandoned sometimes and it’s as-San’aanee preferred it in “Sabulus Salaam” (explanation of Bulughul Maraam) so return to it if you will.
